Bob’s Bites: How Slapp’n Slabs fed my parking lot BBQ obsession

Let’s agree that some of the best BBQ comes from food trucks in a parking lot.

I’ve mentioned in a previous column that if I see a smoking grill in a parking lot, I’d likely cause a traffic hazard trying to get to it.

Luckily I didn’t have to put anyone’s safety in danger to feed my greed. That’s because I didn’t have to hunt down one of the tastiest BBQ trucks in the city.

Instead, I subscribe to the Facebook alerts.

Last Sunday I was alerted that Slapp’n Slabs BBQ food truck would be posted up at the Liquor King Party Store in Bridgeport Township.

I teleported to my vehicle and pulled up.

Pro tip: If you ever pull up to a food truck and notice meatless gristle and rib bones discarded onto the parking lot, just know the food is good.

So good in fact that people couldn’t wait to start eating. So good in fact that they disregarded every littering law/ordinance because tasting the food was of high importance.

So good … you get the picture.

Of course, I came for the ribs and tips, which are always tender, smokey and well-sauced with the signature Slapp Sauce.

But something else caught my attention. Turkey tips!

“What are those?” I yelled in excitement!

“Deliciousness on God level,” he responded.

“Me want,” I said, drooling.

I still don’t know what part of the bird these delicious, smoked morsels of turkey came from, but if you don’t eat pork, they are exactly what you need.

The meat was tender. The flavor was there. Licking of the fingers was mandatory.

Turkey tips won me over.

Terrance Williams, the owner, is a culinary genius. I don’t know if he went to cooking school, but the brother can burn!

I couldn’t order just the tips in my “Big Back” behavior (see previous column). I walked away with perfectly seasoned southern-fried catfish and the famous Slapp’n ribs.

A BBQ is not a BBQ without side dishes. I had to choose from southern-style green beans, homemade dressing, candied yams and baked mac and cheese.

“Give me all of ‘em.”

The Facebook message that brought me there had to come from above because my meal was heavenly!
